A new burrito shop will be opening in Stadium Village next to Caribou Coffee in May.
Leo’s Burritos is a new take on the “cafeteria line” burrito and will offer customers sautéed made-to-order burritos.
Manny Perez, an owner of the shop, said he sees burrito restaurants to be an up and coming concept.
“It’s a good product with lots of different variety to be had,” Perez said. “And there’s only one kind right now—cafeteria line.”
The flavors at Leo’s Burritos are internationally chosen, featuring options like teriyaki, lemon garlic and Thai chicken. There will also be some vegetarian options.
The restaurant will be the brand’s first, but Perez said he’s owned a few Subway sandwich shops before.
Perez said one of the reasons he chose to start his business in Stadium Village is because of the recent growth with the new stadium and apartment construction.
Though the shop will be opening in May just as construction for the Central Corridor begins and students will be leaving campus for the summer, Perez said he isn’t worried.
“It will be a challenge but we’re ready,” he said. “We’ll be fine.”
