College Kitchen: Picnic

Beautiful weather calls for a picnic with friends.

A fruit salad is an easy and delicious way to add a healthy element to your picnic.
Finals are around the corner — and if you turn yet another corner, summer is waiting  for you.
 
 
Before your squad heads in different directions for the sunny season, organize a get-together to celebrate the end of the year.
 
 
With picnics, you don’t have to take on all of the food responsibilities. It’s easy to make it a potluck — there will be food for everyone, and your wallet can take a breather. 
 
 
It’s impossible to forget classic items like sandwiches, hot dogs and hamburgers, but don’t overlook the fruit that can really class up a simple picnic. 
 
 
Mojito fruit salad
 
 
Nonalcoholic, of course
 
 
4 cups watermelon
1 pint blackberries
1 pint blueberries
1 pint raspberries
1 pound strawberries (1 carton)
3 limes, zested and juiced
A handful of mint
 
 
1. Zest the limes, and juice them into a big bowl. 
2. Roughly chop the mint leaves, and add them into the bowl.
3. Throw in all the fruit, and give the fruit salad a good toss.  
4. Put the fruit salad in the fridge for 15-20 minutes before serving.
 
 
Fruit pizza
 
 
The best of both worlds
 
 
1 roll of premade sugar cookie dough
8 ounces cream cheese
1/2 cup sugar
1/2 teaspoon vanilla
Any fruit to top it off (recommended: strawberries, blueberries, kiwis)
 
 
1. Take out the cream cheese, and let it soften.
2. Shape the sugar cookie dough into a pizza crust shape. Then, bake according to the directions. 
3. Put the softened cream cheese and sugar into a bowl. Then, mix it together. You can use a mixer as well.
4. Add the vanilla, and make sure it is thoroughly incorporated.
5. Wait for the sugar cookie to cool down before putting on the cream cheese frosting.
6. Top it off with fruit.
