College Kitchen: Brunch edition

Another semester is ending, so gather all your friends and throw a kickass brunch. Who knows when all of you will be together again anyway?
 
The great thing about this meal is that there are so many brunch-appropriate foods. From French toast to frittatas, brunch menu possibilities are endless. 
 
When planning a brunch, choose a few main dishes with the size of your group in mind. Pancakes and scrambled eggs are classic choices. Make sure to consider dietary restrictions as well. Plan for mimosas — after all, what brunch is complete without some booze? 
 
Planning and executing brunch is hard work, but it’s a guaranteed good time with your squad.
 
 
French toast
 
The spices add a nice punch to a classic. 
 
1 loaf challah bread
 
4 tablespoons sugar
 
1 tablespoon cinnamon
 
1/2 teaspoon grated nutmeg
 
1 teaspoon vanilla extract
 
1/2 cup milk
 
8 eggs
 
A pinch of salt
 
A few knobs of butter to fry the French toast
 
 
1. It’s best to use day-old bread to make French toast, but fresh bread will work, too. Try getting challah or brioche bread.
 
2. Add all the ingredients to a bowl and mix thoroughly.
 
3. Cut the loaf of bread. Make sure to get nice and thick slices.
 
4. Dredge the slice of bread in the wet mixture.
 
B Heat up a skillet and throw some butter in it. Make sure to have the heat on medium so the butter doesn’t brown and your French toast doesn’t burn. 
 
6. Put the slice of bread that’s been in the wet mixture onto the skillet, and cook each side for two to four minutes. 
 
7. Serve with berries, maple syrup or chai whipped cream.
 
Tip: If you’re serving a big batch to a brunch squad, heat your oven to the lowest temperature and keep the French toast warm in there until it’s time to serve. 
 
 
Chai whipped cream
 
A dollop of chai whipped cream takes French toast to the next level. 
 
1/2 cup chai concentrate
 
1/4 cup sugar
 
1 cup heavy whipping cream
 
 
1. To whip the heavy whipping cream, it’s best to have extremely cold equipment. Throw your bowl and whisk in the freezer for at least ten minutes prior to whipping.
 
2. Add all the ingredients into the bowl. 
 
3. Whisk the ingredients. If you have an electric mixer with a whisk attachment, it’ll take anywhere from five to seven minutes. Doing it by hand takes 12-15 minutes.
 
4. Serve the chai whipped cream on top of French toast, crepes or eat it with some fruit.
